Cydonia oblonga is the botanical name for the common quince, an underappreciated fruit that I love (and this is knit from Quince & Co yarn, so…). When cooked, quince becomes a beautiful rosy pink like this hat!

If you’ve never tried it but love cheese, seek out Spanish membrillo paste made from quince…it’s great with salty, sharp cheeses and crackers. And if you can find quince locally, it’s super easy to make in a slow cooker, too.
