Every Italian region has its typical kitchen. The same dishes are not served from north to south, and a Roman mother hardly cooks the same dinner as a Tuscan one. The same with the sweet pastry. In Naples one of my absolute favorites is the Francesina. It’s a triangle shaped puff pastry treat usually filled with custard and sour cherry or chocolate cream. Crispy and airy, filled with mellow pastry cream and marmalade, it’s a perfect combination of heavenliness.

Amarena means sour cherry in Italian, the lace in these socks reminds me of the shape of this delicious pastry.
Knitting begins from the toe. When the increases have been made, the Amarena pattern is established. The gusset increases are hidden under the sole. The pattern runs in the middle of the instep and front leg to the cuff and integrates seamlessly into the ribbing.
