This beginner friendly cuff-down and toe-up (written and charted) sock pattern recreates the delicious symmetrical pattern of waffle squares (or syrup pockets as their referred to in my house) with an easily memorized and texture-filled stitch design, inspired completely by the clumsy musings of Sookie St. James at the Independence Inn.

As some of my testers have said, it’s the perfect vanilla pattern with a drizzle of peach sauce for a little interest. Perfect for any feet and any yarn – tonal, speckle, or variegated – and would even be an amazing scrappy sock, with striping of colors throughout.

I used a US 1 (2.25mm) circular needle for magic loop, but any sock needle and method works! Just make sure to get gauge (or not, whatever, they’re your socks). If using a 9” circular, add a stitch marker halfway to mark for the start of Needle 2.

But honestly, let’s talk about this for a minute. These are your socks. You can literally knit these at whatever gauge you like your socks! The pattern is a multiple of 8, so if you want to make worsted socks, DK socks, socks for your horse, just do it! Figure out the circumference of your desired foot width (minus an inch for negative ease to really stay on) and then figure out how many stitches your swatch gets per inch. Multiply that many stitches by the number of inches you need and cast on that amount!

You will need a stitch marker, darning needle, and any other notions you prefer for sock knitting.
