In March the winds change, the jet stream shifts bringing warmer air up from the south, and when that combines with the longer days and warming temperatures of impending Spring the Maple trees in North America begin to wake up. Our family has been making pure maple syrup for 11 years, and combining my two favorite hobbies just seemed natural.
