Mirepoix is named for a village in France with row housing dating back to medieval times. The stacks of windows inspired the simple texture and design of stockinette stitch blocks seperated by linen stitch strips.

Note: a yarn with silk content and blocking are important to this design. If you choose to use a yarn without silk or decide not to block the finished cowl, you will very likely end up with ruched blocks of Stockinette (which looks really cool too).
