The pavolva is a popular summer time dessert in Australia and New Zeland – both countries claim it as their own creation! Named after the ballerina Anna Pavlova, it consists of a meringue base covered in cream and topped with seasonal fruits – usually passion fruit, kiwi fruit and berries.
