Switched out the 12ply for 2 strands of 8ply held together.
The coat is a mix, but as the majority was 8ply, I tasseled every stitch (instead of the instructed checkerboard application.) It took forever, but he’s pretty delightfully scruffy.

For me, the nose was the hardest, as I could not visualise the instructions at all. Once again, other people’s project pictures were immensely helpful!
