Gauge Test:

Sample with 10mm hook: perfect 7 stitches x 6 rows but honestly the work seems too compact and I don’t like the effect!

Sample with hook 11.5mm: the gauge is 6.5 sts x 6 rows, but I like the effect much more! The yarn remains nice and soft and not too compact like for 10mm hooks! I certainly prefer it!!! heart_eyes

So I decided to use 11.5 mm hook, and I will follow the size M to get a size L! So I will have about 2 inches of positive ease.
If I followed size L with 11.5mm hook I would have positive ease about 6 inches, maybe a little too much!!!
