Beluga Sturgeon is knitted almost entirely in one piece, with the pectoral fins knitted separately and sewn on. You will have to be able to knit on double pointed needles to make the sturgeon, as well as do basic increases and decreases. The gauge is not super important here, but I knitted mine extra tight because you will need to really stuff it firmly. The tighter the gauge, the better, here.
