Hat was originally written to fit a child, but going up or down 1-2 hook sizes will tweak the size of the hat.

Increases are written to be staggered. This will keep your hat from becoming an octagon. If you feel more comfortable using standard increases, you can. As long as you end up with the correct number of stitches in your rounds, the pattern will still work.
