This pattern includes a chart for the entire hat. You begin with the earflaps, which are worked separately, and work up to the top.

I used Malabrigo worsted merino double stranded. You could substitute another worsted weight yarn or single strand it with a chunky yarn. Just remember, cables stand out with a solid yarn, and not so much with a varigated yarn.
