After battling with my resistance to heel-flap-and-gusset heels and top-down socks generally, I decided to adapt the pattern to my own internal short-row, toe-up pattern. It’s basically this one.

I still cast on 64 stitches for the medium size as the pattern directs, and I’ll be using the pattern for the random chart picking for each row of colour, but it’s going to be a short-row toe with provisional cast-on and then a short row heel.
